<DIV>Cassava木薯是世界三大薯类之一，广泛栽培于热带和亚热带地区。在我国南亚热带地区，木薯是仅次于水稻、甘薯、甘蔗和玉米的第五大作物。它在作物布局，饲料生产，工业应用等方面具有重要作用，已成为广泛种植的主要的加工淀粉和饲料作物。木薯为大戟科植物木薯的块根，木薯块根呈圆锥形、圆柱形或纺锤形，肉质，富含淀粉。木薯粉品质优良，可供食用，或工业上制作酒精、果糖、葡萄糖等。木薯的各部位均含氰苷，有毒，鲜薯的肉质部分须经水泡、干燥等去毒加工处理后才可食用。由于鲜薯易腐烂变质，一般在收获后尽快加工成淀粉、干片、干薯粒等。木薯主要有两种：苦木薯和甜木薯。加工后食用，为当地居民主要杂粮之一。</DIV>

<DIV class=cpacon>木薯淀粉可制酒精、果糖、葡萄糖、麦芽糖、味精、啤酒、面包、饼干、虾片、粉丝、酱料以及塑料纤维塑料薄膜、树脂、涂料、胶粘剂等化工产品。<BR>利用木薯块根和叶子作食物和饲料时，应注意去毒，即浸水、切片干燥、剥皮蒸煮、研磨制淀粉等。切片干燥一般可除去75%的氢氰酸，加工制淀粉后含量甚微。甜品种类型剥皮蒸煮或切片干燥后均可安全使用，苦品种类型去毒处理后，也可食用和饲用，但主要用于加工淀粉。 </DIV>

<DIV class=cpacon>1. 专家建议，首先应该把木薯剥皮并切成片，然后再通过烘烤或煮等方法烹制，经过这样加工后的木薯是可以放心食用的。而经过加工的其他木薯制品，如木薯淀粉、木薯条或木薯粉都几乎不会对人体造成危害，因为加工过程中有毒物质已被去掉。<BR>2. 甜品种其块根可直接熟煮食用，可制作罐头或保鲜供应市场，亦可制作糕点、饼干、粉丝、虾片等食品，其叶片还可作蔬菜食用。作畜禽、鱼类热能饲料，代替配合饲料中所有的谷类成份。用于制糖工业，制造葡萄糖、果糖等。发酵工业，制造酒精、饮用酒、各类有机酸、氨基酸、木薯蛋白等。<BR>3. 化学工业：制造山梨醇、甘露醇，乳化剂，涂料等。尤其可望用于制造可降解的塑料制品。</DIV>
